Vietnamese food has a concept I don't often see in western cuisine - "ngán."
It's translated as being bored but applies when your palate is dulled by the sameness in texture, taste.
We want our food to hit different notes. A bánh mì is simultaneously soft and crunchy, spicy and cool, fatty and sour.

The "Danger Zone" for food (bacteria grow like crazy) is between 40F and 140F, so keep hot foods hot and cold foods cold (more info below). Hot foods 2 hrs max before you need to refrigerate, cold foods can do 4 hrs

As someone who loves to bake, it was sad when I left teaching because I could no longer give my baking to fellow teachers. Now though I can give stuff to my partner to take to astronauts and that is also very good indeed.
At a cake cutting ceremony for their mission, an astronaut shouted me out for my baked goods. A highlight of my life.
What is the best compliment you ever received? Putting aside whether or not you believed it.
