I render down bacon lardons, which gives me bacon bits + grease as the cooking fat, & use cooked rice (not bread).

My pecan pie take: there is so much variance between a terrible one (old nuts, or too one-note sugary, or over baked) and an actual good one (pastry made by someone who knows how to, proper texture, good fresh pecans), and lots of people have had terrible pecan pies that they swore off them forever
