the icon for your contacts is often a book with tabs to resemble this - people used to keep actual little books (often with alphabetized tabs) in which they'd hand write people's contact information they wanted to remember.

the bookmark icon looks that way because it depicts a flat item (often a ribbon, or paper) placed between the pages of a book to mark a particular place in the volume, making it easy to find a particular section later (for example where you last stopped reading)

dodging was a technique done with tools like this, moved over the exposure to block some of the light. Basically just a little light blocker on a thin wire.

To mask an area of a photo, one technique was to use a red masking film like this, and cut it to the shape of what you want excluded with a knife. This is why some software still represents it with a red translucent overlay

The crop tool symbol is based on this actual physical tool, sometimes called an adjustable enlarging easel. Its a piece of equipment you might find in the dark room of an actual photo shop.
