NGC 281, the Pac-Man Nebula, is an emission nebula in the constellation Cassiopeia. Distance around 9,500 ly.
3h 48min exposure time on Dec. 31.2025. 3 days before full moon. So the moon shone lightly into the telescope.

This week's #52weeksofcooking challenge was "contrasts". I made mango sorbet flavoured with Trinidad scorpion chilli. Also, mushroom and smoked tofu congee arancini. Both delicious.

OK, but I found this part kind of poetic. Whomst among us hasn't felt an empty cavity inside us when we've grown too quickly after a period of stress?
For a recent Friendsgiving, Daniel, our editorial director, managed to find Yukon Golds at a local farmers market in New York—something I hadn't been able to do for weeks. The win was short-lived: When he cut into them, several revealed a blackened hollow heart. And while it sounds like an excellent name for a heavy-metal band, it's an actual physiological defect—an empty cavity that forms when the potato grows too quickly after a period of stress, often leaving a dark or blackened interior. It's also exactly the kind of late-season problem growers cite when explaining why Yukons have become so unreliable.

I noticed that at the end of last year that I was no longer seeing Yukon Gold taters, so today I went and looked for some to make this dish. No dice. Found a bunch of different yellow taters and these are good, but not the same. Turns out, they’re going away. 🍽️🍜

A change from the Asian flavor profiles I have been pursuing lately: boneless skinless chicken thighs, seasoned with cumin, coriander, and smoked paprika. Kale seasoned with za’atar, sumac, and lots of fresh garlic. A wee splash of lemon juice to perk everything up.

From 1943, The Modern Family Cookbook by Meta Givens EVAPORATED MILK GRIDDLE CAKES 1 cup all-purpose flour ½ teaspoon salt 2 teaspoons tartrate or calcium-phosphate baking powder, or 1½ teaspoons S.A.S.phosphate baking powder 2 teaspoons sugar ¼ cup shortening ¼ cup boiling water 1 egg, beaten ¾ cup evaporated milk Sift flour, measure, and resift with baking, powder, salt and sugar. Melt shortening in the boiling water and stir into the beaten egg; add milk, stir, and add all at once to the flour mixture, stirring briskly until well mixed. Bake on a moderately hot, slightly greased griddle. Makes about 20 cakes, 3 inches in diameter.
