I've been trying trios of cheeses to make macaroni & cheese - "Fromage Á Trois" - and have settled on Butterkase, Baby Swiss, and smoked Gouda.
However, I like a bechamel base as opposed to a custard base. And heavy cream makes a good bechamel, but I want to make it even
