Posting my annual take that spatchcock and dry brining takes a little planning and a good pair of kitchen shears, but it is far and away the most effective, reliable
method for delicious turkey.
A flat profile means the bird cooks evenly, salt brings out turkey’s natural delicious flavor.

the “thanksgiving food is bad” discourse raises its ugly head every year, but the truth remains that thanksgiving food can be amazing as long as you know how to cook. the problem is we’re throwing a few million sunday drivers directly into a grand prix
I think this is unfair to turkey. turkey is good but hard to cook well because it is so damn big. turkey *parts* are great but lack the esthetic appeal of a centerpiece bird.
it is tired to the point of cliche to say if turkey was good, people would make it more than once a year. but it is understated that at least one American explodes every Thanksgiving in a brave attempt to make the main dish more palatable

here's the thing: you can coexist with wildlife without them loving you. that's part of the deal. when I'm at home and I see a coyote I back away slowly until it leaves. that's respect on both our parts. that's how it works. you HAVE to be comfortable with the idea of coexististance vs friendship
listen I joke about me beef with raccoons but I'm dead serious about those guys being dangerous and worth avoiding. they could EASILY hurt me. I grew up in the woods with cougars and coyotes and bobcats. I take this shit fucking seriously

It’s deeply painful and infuriating to reflect that as a country we’ve spent enough money and resources to have put a real dent in the climate trajectory, and instead burned it to invent “the voice that beseechingly calls your name from the woods in the dark of the night”.
I am by no means a prominent public intellectual, but my inbox is increasingly filled with messages from people who have been convinced by sycophantic chatbots that they have discovered revolutionary theories that entirely upend our scientific understanding of the universe.
