if it's not too hot for oven I do a sheet-pan roasted yams with corn and black beans covered in cheese that's easy, pretty tasty, and lasts for several days (pre-bake yams, sliced in half; mix corn, black beans, cilantro, chopped chipotle, scallions and pour over; dump cheese on top & brown in oven)

Recipe Tip You can make any flavor of jam by changing the flavor of Jell-O. Try peach, blueberry, blackberry, etc.
