I made the most fabulous gingercake the other day for a friend, tweaking the recipe to use wholemeal spelt flour, more golden syrup and less black treacle, dark sugar, and lots of cinnamon and nutmeg as well as ginger.

I had to make one for myself this week. Wonderfully Autumnal.

If you ever want to check out some great teas Harney & Sons have some truly fabulous teas. My current rotations are New England breakfast (black tea + maple) Boston (blk+cran+almond) & Williamsburg gingercake (which tastes like pound cake with a dash of candied ginger) they’re all incredible teas.

I had some extra-spicy Lamb Bhuna a couple of weeks ago, with a friend who is from India. It wasn't over-hot, but it had an intensity that was utterly fabulous - and a rich treacle-y gravy texture. The overall impression was simething akin to gingercake. Curried gingercake! 😍

when I was in art school, I had the opportunity to meet the Illustrator of this book (The Birthday Cake Book, by Sylvia Thompson), Brooke Scudder. I really ever only make one cake in here, the ginger cake, as it reminds me of my maternal family history, and also is a damn good cake to add cannabis butter to, which I used to do back in the day before pot clubs and legality. This photo of the small red cookbook with yellow lettering shows Brooke's art: a cool round scalloped-edge rainbow colored plate with a beautiful piece of 2 layer cake sitting on it, with a cake edge and filling of whole blackberries and a white frosted outer edge. There are pretty green leaves between the berries and a red glazed top with a single red lit candle in it. There are festive confetti swirls of yellow and blue in three areas to add some celebratory pizzazz, and the title has a shadow cast from the candle, making a slight double image of the text. Around the image is a drawn framing of alternating black and white squares. The book is sitting on a geometrically patterned wool rug, with cream, a couple of blue hues, and some deep terracotta colors.

This ivory page has no recipe on it, as it's on the following spread, but it does have lots of blobs of spilled ingredients on the paper from my overuse of this recipe and my sloppiness. There is an illustration at the top of the page of a green plate with orange star-like triangles radiating out from the center. On the plate is drawn a block of textured orange Fresh Ginger Gingercake, topped with a frosting of chocolate and chocolate-dipped strawberry lying in its side, with the green leaves still showing at the top of the berry. The text reads: "Fresh Ginger Gingercake Frosted with Glossy Chocolate and Studded with Chocolate-Dipped Fruit For A Crowd. One sumptuous layer of the old-fashioned favorite, intensely flavored and frosted and luxuriously finished. Seek no further for Great Cake. Oh, there are cakes that are richer. Nobler. Gooier. More histories. But none is warmer, subtler, more versatile. Voluptuous. Make it simple with just whipped cream. Or make it fancy with chocolate frosting and chocolate-dipped fruit (my imaginative friend Laurie Colwin taught me the unimagined pleasure of ginger cake with chocolate). But make it, especially for a crowd. MAKES 24 to 28 SERVINGS."
