• Notes Cinnabon recipe •Bil Dough: 1 cup warm milk (110-120F) 5T granulated sugar 2¼ t active dry yeast (1 packet) 550g all-purpose flour plus more for dusting ½ cup unsalted butter-melted 1 large egg 1½ t salt Whisk together milk, sugar and yeast let bloom for 5 minutes (if it's not foamy after 5 minutes, your milk was too warm and it killed the yeast. Start over) Add the remaining ingredients (dough hook of standing mixer if you have one) and mix at med-low or knead by hand 8-10 minutes until dough is springy and tacky but not sticky (windowpane test not applicable here) Cover (in oiled bowl if you want. I never do. The internet says you should. Cinnabon Cover (in oiled bowl if you want. I never do. The internet says you should. Cinnabon didn't) and let rise for until approx doubled in size (check it at an hour, but it can take up to two depending on weather) Turn out onto a floured surface (unless you have a dough roller (why would you??)) and roll into a 20x12" inch rectangle (this will get longer when you roll it if your dough is properly soft. You want a 24 inch log before you cut it plus the ugly bits at the end) Filling: 8T SOFT butter (so soft. Very spreadable. Do not rip your dough. Could be less, though. At work it was 8T but at home l use about 6) 1/2c light brown sugar 1/4c dark brown sugar 2-3T cinnamon (get the good stuff. Cinnabon has proprietary rights to what Is called makara cinnamon. I like Indonesian cinnamon for a substitute) Is called makara cinnamon. I like Indonesian cinnamon for a substitute) Set butter aside. In a bowl, combine the sugars. Then mix 2T cinnamon into the sugar. When fully incorporated, it should have the consistency of granulated sugar-no more tackiness to the sugar. If it doesn't, add more cinnamon until it it does. Now, spread the softened butter across the rectangle leaving an approx 1" strip along the side closest to you. Cover the butter with the sugar mixture (you will probably have a little left over, that's fine, but you want a good layer because as you roll it, the layer will thin out) Take the farthest end from you and push it slightly away. (Stretch don't rip the dough) Roll it towards you as far as the pull keeps it taut. When the dough is slack, move down and repeat until the whole roll has— taut. Start at one end and work your way down and then back the way you came like a dot matrix printer. Continue in the manner of push-away roll-towards until the whole thing is one log. Straighten it if it's kinda snakey, but don't worry about the seam being perfect aligned. Using a SERRATED knife, cut off the ends where the middle is coming out unevenly (you can bake these, but they won't be pretty or as moist) cut the rest into 12 even pieces (approx 2" wide if you're good at rolling. First few times, you might end up with a log about 3ft long. Practice will get you where you want to be) Lay in a greased (with butter) 9x13" pan, cut side up/down. Press very gently on the top. Cover and allow to rise for 45min-1hr or until doubled in size.

I officially have Luna's cardiology appointment scheduled, and the estimate for the appointment which is $964-$1201. I don't know what the best way is to raise money for the appointment. Luna is the last one of his litter, both of his siblings passed from heart failure since Halloween.
