great news everyone, I went back to the antique store to buy the cookbook and the directions for opening an egg from page 34 are even more unhinged than I could have imagined
How To Open an Egg Be bold - be brave! More than anything else, it takes courage to open an egg. Hold the egg firmly in one hand over a bowl or other con-tainer. Then strike the egg smack in the middle with a sharp knite. You have to hit it not too hard, not too easy, making sure to break through the skin under the eggshell. But be sure your knife is sharp. When the shell is open, quick as a flash insert your fingers at the two sides of the opening and pull the shell apart. Let the yolk and white of the egg drop into the bowl. You may have trouble at first, either squeezing the shells or getting pieces of the shell into the egg. But practice makes perfect. Just remember - be bold - be brave!
