the em dash is not used a lot, because it's very difficult to type (Shift + Option + hyphen on Mac, Alt + 0151 on Windows. it's 5 keys, to this day I have never typed em dash once on my keyboard). hyphens (used in the OP) and en dashes are commonly used by humans.
