I don't think there's any need to dig deeper than simply writing a role for a fat person. A writer doesn't need to Solve Fatness, it's just that if they never start challenging themselves, their work will stagnate in this regard.

The tendency is toward default modes of being, toward broad appeal, toward never alienating any potential reader. The rarity of fat characters in written fiction is a good example. A taboo exists, and most writers never even approach violating it.
