🍽️ Today I delivered a hot lunch to a friend who had hip replacement surgery 2 weeks ago. The surgery went well, but she's had some other post-op complications. I stayed to share the meal with her & her mother & we had a great visit. I made butter chicken & coconut rice & took along some cookies. 🧵

Not pictured: store-bought naan bread and a simple green salad. The butter chicken recipe always makes extra sauce, rich with garlic, tomato, & spices (garam masala, turmeric, cumin, paprika, cayenne), so when I got home, I mixed that sauce with some of the winter squash puree I had made last week.

Added 1.5 cups of chicken broth and a half cup of half and half. It's rich and creamy and flavorful. Stuck one container in the freezer and the other one will be lunches this week.

Butter then high speed blend. Cook pasta and I made tofu with Shannon Martinez' rice paper bacon recipe with pressed tofu instead of rice paper. Holy moly this was so good.

#quietobservers is the theme for #birdoftheday. Northern Spotted Owl, Northern California and Boat-billed Heron, Turrialba, Costa Rica. Both these birds startled me with their quiet presence much closer than I would have knowingly approached.
