If you do the ML correctly the packing machine won't have errors because there is a fixed set of possible inputs and it's been trained on them.
I agree that their single purpose is to parse and generate human sounding text.

The problem is that humans don't generate text for one singular purpose.

Sometimes the meaning of the text exists outside the text itself. Something LLM will always struggle with.
Half the reason this is tough to answer definitely is that "AI" means so many different technologies.

Machine Learning for example can be extremely powerful and can have low error rates.

LLM are by their very nature error prone. It's an inherent part of the underlying statistical modeling.
