On biriyani, you let the flavour of a little lamb, alliums, nuts, saturate a whole vat of rice. For a fine steak you make jus with meat that gets thrown out (!!) to put more meat flavor into the central pure fatty meat. While we’re too squeamish about its origins to even eat hearts & knuckles whole.

Steak (& high-end sushi) is the most capitalist food. A whole dominant cuisine oriented around the tiniest fetishized parts of big animals. Minimal flavoring, industrial precision rather than baroque artisinal preparation, just eating scarcity, it’s undeniable addictive death and fat-saturated taste

It’s old - kicked off in the Depression, and the Social Credits governed in BC from midcentury to the 80s. They distanced themselves from the original crank theory to become generic conservatives, I believe. But it’s a precursor to bitcoin bro politics, carried on by Ken Sim in Vancouver

The Technocracy then Social Credit fashy engineer-led movement in Canada is a fascinating examples of this. Crank theories about money by a retired engineer, spread by a preacher, formed a political party that ruled Alberta and British Columbia for *decades* (it’s part of why they are Like That)

Retired engineers, for *generations* have been a fertile ground for crackpot theories in everything.

Falling condo prices are a policy success. Yay having a place to live! We just need to use public money and zoning / construction reforms to keep housing getting built at a lower cost basis. And to give seniors a dignified retirement or youth a college education funded other than by real estate.
