Well my first fermentation is on day 11 and I wanna check the PH. I'm excited and nervous. I feel like you're supposed to try and not open the ferments if at all possible but I only really wanted 10 days initially up to 21. If it's below 4.6, I'll blend it up and prepare for bottling. #fermentation

Just gave my brine a taste test, the heat has mellowed, the lactic acid is starting to come through, and the garlic is punching above its weight class. pH is still low 5/high 4, and it's just delicious.

So. If you don't want soggy glue for leftover soup, cook the noodles separately. Tossed with a little schmaltz, pasta water and sea salt. Combine for each serving. Store separately.
Chicken and vegetable soup, made from rotisserie chicken carcass, (strained, pick and chop the meat), carrots, celery, the carcass stock, onion, white pepper Cooked pasta shells, tossed in a little pasta water, schmaltz (skimmed from the stock) and parsley Soup and noodles combined. Locally, this is called "raining buckets." We only get about 12 inches (giggity)/year, so this is significant, and early.

I was just talking to my boss about tradeoffs. Everything has a cost, and if that cost is saved in wages, you're wading into exploitation (if we're being honest).
