Whipped up some fried chicken strips, mash potatoes, country gravy and buttered corn for dinner. One hour, not bad considering I butterflied and dredged the chicken, fried from scratch.

The sides, well, I opened the boxes and cooked them, so it counts, lol.

Lacto update: these have been fermenting for 6 weeks. I've combined 3 jars into 2, and refrigerated to settle and clear.
Amazing crunch and heat in the peppers and garlic, 3.75% sea salt brine.
Spices:
foraged black mustard
Coriander seeds
Cumin seeds
Whole allspice berries
Bay leaves

I changed that yesterday.
It was 50° on the valley floor, 30° on the high passes.

One week taste/texture test.
Damn.
Never have I tasted a crispier pickled pepper. spices are subtle, detectible through the heat. Will ferment one more week to amplify the sour notes.

Okay, #FermentSky, here's where I'm at: 4 jars actively fermenting, 1 jar (red mash) is 3 weeks old (started 4 October) the other three are jalapeno rings, 1 week old today. 3.5% brine in the red mash, 3.75% in the pepper rings. pH is low 4 in my estimation, flavors are all rich, tart, and briny.

I had the absolute time of my life this evening. Local fiesta para Dia De Los Muertos, including a parade, live music, food, and dancing. I made a dear friend with a cacahuate roaster, and marveled at the peace, love, joy and generosity. ¡Viva México!
