Enrico Fermi. No one else even close. An actual Italian-American, unlike Columbus. Like Einstein, Fermi was one of the greatest theoretical physicists of all time. Unlike Einstein, he was also one of the greatest hands-on experimentalists of all time. Total badass.

Serious suggestion for an "Italian-American Holiday" to replace that function of Columbus Day (and bonus, there's already a bunch of statues of him in NY and other major cities):
