Made a quick crustless quiche - mushroom, asparagus, ricotta, parmesan. Wilted a bag of baby spinach with a splash of tamari and nutmeg. One of those “what have I got in the fridge that’s quick” dinners. Quite decent.

1. Butternut squash, spinach and chicken pea curry. Doesn’t look great but taste is very lovely.
2. Things I dug up that weren't doing well where I'd planted them. Flamingo tree was definitely unhappy. Fingers crossed.

I've really gotten into making smoothies at home recently. My go to right now is Spinach, Banana, Blueberries, Blackberries, Yogurt, and a splash of OJ. Now I can't wait till local berries are in season.

Seedling update: Lettuce is all doing well except for the romaine which doesn't want to germinate 😡 Spinach is looking pretty good. Three brave little bell peppers have sprouted, still hoping some more will come up.

The tomatoes have taken off and I decided to pot them up. 23 plants....

The vacuum jar sealers are great Best product investment we've made in some time. New uses for it all the time. Just about anything you put in a ziploc or tupperware you can suck and save with a Mason Genie, or M11 sealer. We keep shredded cheese, spinach, mixed salads, bacon. The M11 is cheaper

I'm going to pretend I never read this because just the idea of cooked spinach makes me squirm; I cannot handle the texture. Good thing I'm getting fiber from a number of sources!

Spinach and kale are common high fiber additives, so those count, too.

But pushing people to eat more fiber is really good because Americans don't get enough and—fun dovetail into something I read in the wake of James Van Der Beek's death—colorectal cancer rates are increasing for young people.
