Dinner turned out great! I discovered my feelings about not-fully-rendered chicken fat and everyone else loved it. The potatoes were my closest yet to perfectly crispy roasted potatoes. We'll see if I can get it down just right for D&D Saturday!

Been so immersed in "the perfect crispy roasted potatoes" discourse that I didn't think of a main to make for dinner tonight. Went on a little ADHD trip through random recipes for chicken thighs until I came across one that fits all my criteria. Tonight, dinner will be glorious! And easy.
