Considering it's a work of fiction, unless it's depicted in the movies or other material the answers to your questions are: Yes. Zero. They don't. By asking parents. There's also no indication that they have no rights nor the option to return to their families, and Jedi can freely leave the Order.
He was on a mission to save another planet whose people were being put into death camps. It was a tough call but he chose to prioritize his current mission. It is an indictment of the Jedi that they weren't more active in fighting injustice but that's not a revisionist interpretation of the movies.
People are allowed to leave the Jedi order, so yes.
They don't steal children. There's no law requiring that Force sensitive children have to be sent to the Jedi temple for training. Qui-gon tells the Jedi council he'll leave the Jedi order to train Anakin himself, they don't even have a monopoly on training people to use the Force.
Then he'd have to deal with an entire planet of pissed off slavers, all while he's trying to safely escort Padme to Coruscant to deal with the Trade Federation's occupation of Naboo.

My guess is they'll find information on people after they're arrested in order to retroactively justify arrests, although I assume 30 people is also an extremely inadequate number for that too.
A lot of them probably did, or didn't care, but I think the fact that he lied about Project 2025, however transparently, means that the idea he has a mandate to enact it should be pushed back on whenever it occurs.
It's all the same to them.
