You put NPC's in a game use AI to respond to players, then all anyone is going to do is goad the kindly elf inn keeper into saying something racist. That's it. Once they do, they'll get bored and move on, but you look like a dumbass for allowing it to happen.

It's kinda nuts how every time AI gets put into some product, the number one thing people want to do with it is have it make porn or say some racist shit, and somehow companies never expect this.
