Holy crap this is good pasta. I cheated by using a Loyd Grossman Bolognese sauce, but started with sautéed diced red onion, diced pancetta, tsp diced garlic, tsp chopped red chilis, 5% beef mince. Used some good cheddar, al dente penné and finally some parmesan.
