I understand the reasoning, but “Happy Thanksgiving (etc.) to all who celebrate!” always strikes me wrong. What, if I don’t celebrate your holiday, you don’t want me to have a good day!? As a better person, I say, “You will have a Happy Thanksgiving, no matter what you celebrate—or else!”

We should retire “Friendsgiving” and make spending this holiday with friends the default. I love my family. But with the cultural norm that you’re already having a big meal with family in a month, we *should* have a dedicated non-family event.

Just saw a video that pretty persuasively argued spatchcocking makes the breast cook faster relative to thigh (opposite of intended effect). But I’ve had such great luck with it the last 5 yrs! Maybe it’s b/c I started using probe thermometer + breast temp of 150F at the same time?
