What makes grilled salmon on Italian risotto Faroe Islandic or Danish? Americana, HK Olive Garden?

Ruby Tuesday menu screencap, title Grilled Salmon, missing the Faroe Islands prefix. "A fresh salmon fillet served with a black truffle and forest mushroom risotto". Member price HKD $239, original price HKD $478.

Photo suggests the salmon was baked, from the browned sides. Dusted with grated parmesan and watercress, instead of shaved parmesan and rocket.
