Good question. I've tried half a dozen brands of spicy chili crisp over the past decade, and most are a tame medium on the Holy F**k scale. But also realize that many brands use ground Szechuan peppercorns in their recipe, and those are not so much spicy as they are tongue-numbing. Added sensation.

Oh yes, but if you don’t have tahini (I don’t), tbh once you add garlic, soy sauce, black vinegar, chili peppers and some Szechuan peppercorn if you have that…
Then whether it’s sesame or peanut butter doesn’t much matter. Most people absolutely can’t tell and unless someone has a peanut allergy 🤷🏻‍♀️

This place has the absolute best szechuan in the area. My typical orders are this, three cup chicken, dan dan noodles, and (only if ordering there) fried fish w/ lychee sauce.

Took some leftover congee I made and heated it up with some intensely beautiful 7 day dashi miso soup with spinach and silken tofu, roasted a sweet potato with chili and cinammon to chop up and dump in there, and finished it with fresh scallions, tamari, sesame oil and szechuan chili crisp.

Is there a known, locals-call-it-the-best Chinese takeout restaurant in Portland? I mean shitty Americanized slop like crab rangoons, and spare ribs, not “modern takes on obscure Szechuan cuisine.” I feel like Portland is lacking one since that place on Forest Ave closed like 5 years ago.

Find an asian grocery store that has bulk amount pucks of those ramen noodles without the packets, use those same veggies, buy soy/szechuan sauce=basically a free order of restaurant fried noodles with just a tiny bit of practice in a wok. I wish I knew the trick in my 20s...

Made Szechuan chicken for dinner tonight. Not sure I got the right red chilis bc these were EXTREMELY spicy. It’s the hottest thing I’ve ever cooked. But the Szechuan peppercorns still came through.
