I feel like my grandma probably got this off the back of a margarine box in the 70s or something. It's so delicious when it works! But more often lately it just sort of melts and burns and also doesn't cook all the way, so. Hence the experiment to find an alternative

Mine does not. Also it uses baking powder, not soda, which seems unusual.

That's what I did in the first batch and I think it worked well. That recipe could use more flavor but the texture is good (it didn't call for vanilla and I think you can tell)

I googled "Did they change margarine?" Somewhat sarcastically, being like what a dumb question, of course they didn't.

Nope! It turns out they did!

Remember trans fats? Margarine has been different since about 2018, around the same time my cookies went to shit.

This explains so much.
