End of harvest quesadilla.
Ayocote bean flowers, sautéed with onions, garlic and fresh piquin chiles (ouch but wow) in some oil, then added to a fresh tortilla with burrata. Insane but so delicious I almost feel guilty.

Thanks fort all the responses.
I travel mostly in Mexico and these times and service are not the norm. I'm fine with less room cleaning but the rest strikes me as ungracious.

My first instinct is to check the profits of the Marriot corporation but I'll let it go.

Am I an old grump or is it the new standard for a not cheap hotel room to have a 4PM check in and 11AM checkout?
Room cleaning is every other day (I don't really care) but it all seems like this hotel isn't in the hospitality business.

Is this the new normal?

Ayocote Morado beans with chorizo, onion, carrot, carrot greens, a few dried peppers and lots of fresh peppers. Red and yellow serranos, red poblano, purple goat horn. Alvarez Organic Farm had great stuff at the farmers market this week to pair with these @ranchogordo.bsky.social beans!

Direct to consumer is still cheaper than wholesale. It gives you more control. There are new headaches, but we are in food and it has been a win.

The other problem with wholesale is you make half as much as you should and then retailers aren’t the best at paying so you have to chase the money.

If you ever barbecue, you can save it for that. And as induction ranges, get more popular, someone is gonna come up with an elegant solution. That is a lot of history and clay pots to be wasted!
