My family gathers for Shabbat dinner almost every Friday. The day after Thanksgiving, we always have more white meat leftover than anything and not enough of everything else. Once I started making white meat massaman curry the next night, I’ve never wondered what to do for that dinner.

I have my share of complaints about my kosher upbringing and cooking meals like Thanksgiving in my parents’ kosher home, but kosher turkeys are essentially pre-brined, so I’ll take that head start as consolation.
