Also I can't recommend cooking cranberries in apple cider highly enough. Delicious complementary flavors and it saves you from having to add so much sugar to balance the tartness.

One Thanksgiving cooking debate I think is overblown is stuffing the turkey. Sure, there's the risk of either overcooking the turkey or not cooking the stuffing to a safe temperature, BUT you can just pull the stuffing out when the bird is done and finish it on a sheet pan for safety and texture.

This will be my ninth Thanksgiving cooking solo at my parents' place for 9-10 people. If anyone needs tips from a good amateur, I'm around. It's a kosher home, so no dairy in the meal.
