Ive got live oaks nearby for tannins but i dont think the shrimps eat those. No nettles near but i could probably get some fruit leaves like guava or bananas. Iv read people use spanish moss which i have too, but im afraid of the chiggers that live in there causing problems. Maybe boiling it first?

Indeed - Grenache might be your best bet for reds if / when you have to. Cheaper than Pinot but has the same thin-skinned paleness and lack of tannins with good acidity.

BTW, there’s an increasing trend to make white wines from red grapes. Had a white Malbec a while ago.

It’s quite high in acidity, Steve, and low in tannins and extraction.

So, in some ways it has more white wine characteristics than red. Especially as it ages.

ah that's alright, most of the tannins are in the gross outer husk part and once they start rotting and getting wormy you can just shuck it off into the bin and the squirrels can have the nuts, don't even need to clean out all the gunk to use them as dye, so long as you have a screen of some sort

Valentine’s Day is not a big deal in my house, but that doesn’t mean I won’t use it as an excuse to open a nice bottle. Specifically, a 26-yr old Syrah. Olives, soy sauce, and a core of berries enveloped by integrated tannins and lively acid. This is what drinking aged wine is all about.
