Ive got live oaks nearby for tannins but i dont think the shrimps eat those. No nettles near but i could probably get some fruit leaves like guava or bananas. Iv read people use spanish moss which i have too, but im afraid of the chiggers that live in there causing problems. Maybe boiling it first?

Adelsheim Vineyard Laurel Leaf Vineyard Pinot Noir 2021, Laurelwood District, Oregon Reddish in color with light intensity. Nose of raspberries, cherries, light cedar, spices, light earth, herbs and chocolate notes. Medium bodied with medium acidity. Dry on the palate with cherries, sweet raspberries, light oak, licorice, tobacco, herbs, dark chocolates, black pepper, earth and black tea. Tangy finish with soft tannins and cranberries. This young Pinot Noir from Oregon is starting to drink nicely now. Elegant and complex, with a soft mouthfeel. Spicy and entertaining. Nicely balanced with lots of earth notes to compliment the fruits. A New World Pinot Noir with an old world feel. Interesting stuff. This Single Vineyard Pinot Noir will continue to age nicely in the next 10 years. Would be nice to revisit it in 5 years and see how it evolves. Good by itself as a sipping wine, and will also pair nicely with food. 100% Pinot Noir grapes were aged in (33% new) French oak barrels for 14 months. 13% alcohol by volume. 91 points. $80.

Westcott Vineyards Butlers' Grant Cabernet Franc 2020, Canada Reddish in color with medium intensity. Strong nose of red fruits with light wood, spices, herbs, earth, light vegetables and black pepper. Medium bodied with medium acidity. Dry on the palate with blueberries, currants, plums, fresh cherries, light oak, tobacco leaf, herbs, peppercorn, earth and mediterranean spices. Medium length on the finish with fine grained tannins and tangy pomegranates. This 6 year old Canadian Cabernet Franc feels extremely fresh and engaging. Fruit forward, elegant and complex. This Single Vineyard Cabernet Franc is good right out of the bottle, and better after an hour of airtime. Really enjoyed the nose once it opened up. Peaking now, and will not get much better from this point on. A small production of only 1,200 bottles. 13% alcohol by volume. 90 points. $45.

Indeed - Grenache might be your best bet for reds if / when you have to. Cheaper than Pinot but has the same thin-skinned paleness and lack of tannins with good acidity.

BTW, there’s an increasing trend to make white wines from red grapes. Had a white Malbec a while ago.

It’s quite high in acidity, Steve, and low in tannins and extraction.

So, in some ways it has more white wine characteristics than red. Especially as it ages.

ah that's alright, most of the tannins are in the gross outer husk part and once they start rotting and getting wormy you can just shuck it off into the bin and the squirrels can have the nuts, don't even need to clean out all the gunk to use them as dye, so long as you have a screen of some sort

Valentine’s Day is not a big deal in my house, but that doesn’t mean I won’t use it as an excuse to open a nice bottle. Specifically, a 26-yr old Syrah. Olives, soy sauce, and a core of berries enveloped by integrated tannins and lively acid. This is what drinking aged wine is all about.

Chateau Fortia Cuvée du Baron Châteauneuf-du-Pape Rouge 2018, Rhone, France Dark ruby in color with a wide reddish rim. Beautiful nose of red fruits with earth, light wood, coffee, spices, dark chocolates and peppercorn. Medium bodied with medium acidity. Dry on the palate with black currants, plums, cooked cherries, spices, chocolates, light oak and licorice. Long finish with fine grained tannins and tangy cherries. This 8 year old GSM blend from Châteauneuf-du-Pape is delicious now. Complex, well balanced and entertaining. Elegant and fruit forward. I had the 2020 vintage not too long ago, and this one drinks so much better. Will continue to age nicely in the next 5 to 7 years. Robert Parker 93 points. Easy drinking and good by itself as a sipping wine. A blend of 40% Grenache, 40% Syrah and 20% Mourvedre. Aged in large French oak barrels for 18 months. 15% alcohol by volume. 92 points. $55.

Force Majeure Red Mountain Syrah 2018, Washington State Inky in color with a short reddish rim. Strong nose of black fruits with cedar, licorice, chocolates, earth, herbs, mediterranean spices and black pepper. Full-bodied and smooth with medium acidity and long legs. Dry and very fruity on the palate with black currants, black plums, dried fruits, cedar, figs, light alcohol, black licorice, dark chocolates, light earth, tobacco, herbs and peppercorn. Long finish with fine grained tannins and tangy cherries. This 8 year old Syrah from Red Mountain is drinking beautifully now. Rich and fruit forward. Nicely balanced and elegant. Complex and entertaining. Delicious now, and drinking close to its peak. Will continue to age nicely in the next 5 to 7 years. Good right out of the bottle, and better after 2 hours of airtime. Good by itself as a sipping wine or with food. A blend of 98% Syrah and 2% Viognier. Aged for 18 months in (23% new) large French oak barrels. A small production of only 500 cases. 14.9% alcohol by volume. 92 points. $100.
