2) Tuna rib crudo is an even bolder take of raw tuna scraped off its own ribs, which I’ve only seen before at daring chef (& Noma co-founder) Mads Refslund’s Ilis in Brooklyn.

1) At irreverently delightful color-splosion of a restaurant, Shuggie’s, Le Fish Stick is just that: a giant codfish stick utilizing fish offcuts from local fishmongers. Crispy Fish Party is even more fun, whole fish curved, fried, dotted w/ dilly aquafaba, collards & trout roe.

1) Sommelier Paul Einbund & chef Gavin Schmidt’s James Beard-nominated The Morris is an SF treasure. Lucky Oakland now has their second restaurant, Sirene.

The draw is seafood, yo, from creative shellfish charcuterie to outside-the-box crudo. I love these fried anchovies & shishito peppers...

2) Her Isan Thai heritage shows beautifully w/ Japanese elements in tuna tartare in wasabi aioli & fish sauce-lime dressing. Seared scallops were overshadowed by pitch-perfect, spicy ginger scallion stir-fried cellophane noodles. Tori nanban fried chicken sang in herbs+egg salad.

1) One of my top SF sushi spots has been The Shota. Owner/chef Ingi “Shota” Son opened Shoji in Feb., a cafe by day, sleek bar/restaurant by night.

Though some dishes sounded typical (e.g. ubiquitous tuna tartare), chef Intu-on Kornnawong ensures they're anything but...

2) Debora's menu was a welcome walk through Bogota neighborhoods, whether a crave-worthy potato & stewed meat fried puff partnered w/ Colombian creole sauce or gorgeous play on callos stew dotted w/ black pudding chorizo & tomatoes.

1) The World's 50 Best Discovery restaurant Debora is prime example of how much Bogota's dining scene has grown since my visit in 2018. Chef Jacobo Bonilla focuses on Colombian produce w/ artful presentation+wines curated by Valentino Galán, former somm of Peru’s famed Central, Kjolle, Mil.

While staying at @25hourshotels.bsky.social Copenhagen Paper Island, a location of Hart Bageri / bakery is a couple minutes walk across the canal & provided me proper breakfasts + espresso over my return to Copenhagen.

Desserts are an unexpected strength at San Jose's Eos & Nyx. Here, common chocolate budino thankfully goes restrained on butterscotch, enhanced by hazelnut, sea salt & a line of torn mint its “secret” bright note.

2) F1 sound is so deafening you need ear plugs. The air smells of sparks from tires against the road +all the caviar I could want.
