Coffee rubbed venison medallions, duck sausage w/orange liqueur, pheasant sausage w/Cognac, U-15 shrimp with garlic oil, zucchini, large scallions an charred lemons. Sides: Succotash and wild rice blend. 🍜

Tried some cocktail crab claws from Atlantic Red Crab Company purchased at Costco. I thawed a portion and served it with a sauce of butter and garlic and a bit of Old Bay seasoning.

Not bad for a frozen product. 🍽️🍜

Found this in my upright freezer from after last year's Thanksgiving. These were a big hit when I took some up to Memphis last Thanksgiving.

Still looks good, no freezer burn but I will thaw it and use it just for me in case. 🍜

Baked chicken thighs with pan sauteed yellow squash and sliced heirloom tomato.

Chicken was seasoned with salt, onion powder, garlic powder, smoked, paprika, black pepper and dried greek oregano and baked at 400° for 40 minutes. 🍽️🍜

A Northern Bean and vegetable soup with a ham hock broth.

Smoked ham hocks have little meat on them so these were just flavoring for the broth the rest of the soup was cooked in. 🍽️🍜

Found fresh catfish and thought I would fry it up. Marinated in buttermilk & Louisiana hot sauce.

Coating was yellow cornmeal/flour & spices.

Pretty large filets so had to get out the 12" cast iron. Tough to get the temperature right this try. But sure was tasty. 🍽️🍜🌶️

Made from this HTK recipe. I used the shallow frying method which is the standard, though she gives instructions/notes for deep frying & air frying methods as well. 🍽️🍜

Brown butter/EVOO sauteed "sea bass" with S&P and lemon juice.

With yellow and green squash sauteed in olive oil, scented with shallots & garlic and seasoned with S&P and dried Greek oregano. 🍽️🍜

I fell back into some breakfast tacos. 🌮🌮 😄

Chorizo, eggs, onions and cilantro with a wedge of lime and Mexican style guacamole. Which is pretty much just smashed avocado with salt and lime juice. 🍽️🍜🌶️🇮🇹

A cool, drizzly start to Nov 1. So I heated up some leftover vegetable soup & topped it with a little olive oil and feta cheese. And made a turkey and provolone sandwich to go along with it. 🍽️🍜

Cooked up a vegetable soup tonight. Tomato and chicken stock broth based on a recipe from Allrecipes.

Oven baked baby back ribs with corn on the cob, pickles and BBQ sauce on the side.

Ribs brined in water, salt & brown sugar, dried and coated with Rendezvous, seasoning and wrapped in foil and cooked in the oven at 275 for 2 and 1/2 hours.

First time making a frittata. It was puffy in spots around the edge and was sticking to the bottom of the skillet. Time to re-season it.

It was still tasty though. 🍽️🍜
