We used to do 1, but it often resulted in "<player name> only missed one game session..." deaths. So now it's usually 2. A mate had an ingenious idea when running STA. He then ran 5e but said it was the STA crew on the holodeck, so if someone couldn't make it they were "called away to ship duties."
