Papayasu holds a special place in my fan heart.
I feel like our hopes of seeing him in May are pretty slim, but there is no tougher (tricky) customer in the business.
If anyone can fight through this a few more years, it's him.

Tried an easy pizza and lahmacun crust recipe cause my pizza dough is a 3 day affairm. This is a 60/40 spelt, wheat and overnight ferment without barley malt. Better than expected but it needs a higher temp.
Spicy Vodka sauce, gruyere, provolone, feta, garlic rubbed and sea salt crust.
