Yesterday, 4 adults and a few mishaps created 5 pies and prepped all the things that need oven time. It really cuts the whole bake down to about 3 hrs and no one is exhausted and fainting in their plate at supper. Haha

I cut into pieces. I thought about taking halves off the carcass, but pieces cook faster and have better hydration overall.
I almost always use roux or beurre manié for gravy. Made a 40hr stock last week from the small bird. It is nice and dark. I saved the carcass from this big bird to roast later
