“This all had me wondering: what’s Indian food without the heat? The historian in me has an answer: spiciness is historically contingent.”

Bangers and mash made with Yukon Golds and a hybrid courgette mash, grown by our allotment neighbour Thor Davidson, head chef at Luigi’s. Country-style sausages, proper gravy, and kitchen garden generosity on a plate. Real comfort. #ComfortFood 👩‍🍳🍽️🤌🏻

't Klokhuys restaurant in the evening. This is where you go to eat a gentze waterzooi or Flemish stew when in Ghent.

't Klokhuys in Ghent makes a pretty decent Gentse Watetzooi, for those who seek this dish.

Good morning, it's minus -1°C in Gent, Belgium - full on breakfast then a brisk walk over cobbled stones to start the day!

Entering Le Shuttle on the Eurotunnel, always a little daunting when navigating the edges.

Wishing all our Bluesky friends a very merry Christmas. The kitchen has been quietly busy here, with a Christmas cake now baked, iced and ready for the table. Hope the day treats you kindly. 🧣🧸🎀🎄

As is tradition in our house, the turkey has spent 24 hours in brine. It’s now resting in the fridge, properly seasoned and ready for a long, steady roast for Christmas lunch. #turkeybrine ‧₊˚🎄✩ ₊˚🦌⊹♡

I can’t bake these mince pies fast enough, they vanish the moment they cool. Just managed to get this batch onto a plate, with Christmas in full swing in the background. ‧₊˚🎄✩ ₊˚🦌⊹🧸

A walk through a very rainy Sandwich town last night to see the Christmas tree and lights, now I’m getting into the spirit.

Happy Winter Solstice. What better way to mark it than baking a sourdough with organic regenerative flour, then watching the evenings slowly get lighter while the crust crackles as it cools? Simple rituals, well worth keeping. ⋆⁺₊⋆ ☾𖤓 ⋆⁺₊⋆ ˚🦋༘ #WinterSolstice

Raspberries now tucked in for overwintering with cardboard, hessian and a layer of woodchip. I’ll cut back the autumn-fruiting canes in January. The summer ones are still young, so they’ll stay as they are for now. #KitchenGarden 🔴

Been hunting high and low for Yukon Gold seed potatoes in the UK. No luck so far - not even Otter Farm @markdiacono.bsky.social , where I once found Amandine. Just read a Serious Eats piece explaining why Yukons are vanishing. Starting to make sense now.
Your "Yukon Gold" Potatoes Probably Aren't Yukons—Here's Why
Yukon Gold potatoes are getting harder to find. Here's why growers are moving away from them and which yellow varieties are taking their place.

Started this cake in early November (a bit later than last year). It's had a weekly cognac feed and is nicely boozy now. I’ll ice and dress it next week, ready for Christmas. Here's a quick snap from today’s spoonful. #ChristmasCake 🍽️⛄🎄🎁🥂👩‍🍳

Bread baking drawer clear out and the tools set out on my favourite marble pastry board. Lames, scorers, and scrapers that still earn their keep.

The pallet compost bins are still evolving - next step is adding a corrugated roof to catch the rain, which we’re never short of here. This morning’s temperatures were encouraging: 50°C, 42°C, and 40°C across the three bays. Everything’s moving in the right direction. #allotment #kitchengarden
