Slept from 630pm to 330am thanks to jet lag. But vacation #2 starts today!

No travel. No work. No family stress. No hosting. Just 5 days of football, futbol, food, hiking/gym, rest, relaxation, The Last Waltz, and some Beacon jams. Ahhh.

I love Alton Brown. His old Good Eats show taught me so much about food and cooking.

However, his turkey recipe is a travesty worthy of a class action lawsuit. Overly complicated, overly expensive, and just plain not good.
Having lived through (and survived) the wet-brining mid-aughts, I cannot overstated how much easier it is to dry-brine.

What an ordeal it was to bring a giant lobster pot full of water, salt and spices to a boil before finding a container large enough to hold the turkey submerged in brine
