I beat my PR today. 2 days, 17 hours and 3 minutes. It was a wild twisty ride with many mixups.

Oh. I have one of those. More of a gate to hell than darkness though. (She’s old so more like a crack than a gate anymore)

Sour Dough. Started at 11am yesterday. 25 min hydrolyse, 3 turns at 40 minutes. 7.5 hour bulk rise at 72 (kitchen is cold). 25 minute bench rise followed by shaping and rest in the fridge overnight. Baked in combo cooker at 500 for 22 minute. Took off the lid and finished at 450 for 25 minutes.

9 grabbed my new Christmas sweater, which was horribly made in China, and asked me what it says. “It says ‘Let It Snow’”.
