Today’s “how are you?” response.

Give it ~5min & pull them puppies out.

Once they got a seer on the other side, pop the whole son’gun in the oven.
April 1, 2025 at 11:18 PM
When they got a good seer, flip ‘em, & top with the veggies.
April 1, 2025 at 11:18 PM
Keep the veggies on hand & throw in your chops.
April 1, 2025 at 11:18 PM
Pop the oven on 400, turn the stove up to a medium heat, & we’re using the same skillet with all that caremalized goodness still in it.

I added in some bacon grease (butter works too) that I saved from breakfast this morning.

Now you got veggies that go well with so many damn dishes that you can put on top of or on the side with throughout your week.

(I’m putting some on the batch of breakfast sandwiches I make/freeze for the coming week)

I use the metal spatula at this point, cause you want to be scraping up all that buttery, carmalized goodness with the peps.
April 1, 2025 at 11:18 PM
We want to get our spatula & move everything around the pan as the beer cools off.

It will scorch if you don’t watch it, so when the beer is mostly gone, turn down your heat.
April 1, 2025 at 11:18 PM
Once that’s cooked down a bit, we going to taste test. We still want a the crisp flavor of our peps but it should already start to be sweet.

Then we pour in some beer & turn our heat up.

Now let’s add some paprika & Tony’s & toss in our shallot.

(I go ham with the paprika, I forgot to record that bit)

When they get a chance to soften up a bit, we might want to throw in a little more butter.
April 1, 2025 at 11:18 PM
When they’re soft, let’s add our onion.
