There isn't a straight up fried potato crab to symbolize latkes, but Aethra edentata is sometimes called the potato chip crab, and you can see why from its shape. It's a not too distant relative of Calappa

2n/ Most malacostracon crustaceans, like shrimps and crabs, don’t have these big feathery exopod branches on the thorax, they only have them on the abdomen, where both leg branches look identical and form the swimmerets (think lobster tail swimmers). So it’s so cool to see this!
