L'Shana Tova!!

It finally caught up with me... after All. These. Years....
NOW I get COVID. 1st time. Even being fully vax'd and boosted this sucks rocks. Yeah, I know it could be worse...

Okay, I may be late to the party, but made colcannon for the first time yesterday. Mashed potatoes with chopped spinach, onions, and bok choy. Where has this been all my life??? SO DAMNED GOOD!!!Served with lemon stuffed roast chicken... no gravy. #Food

Just thought everyone should understand how it came to be...

Usually I add more broth and reheat, but today I dumped it in an 8x8 pan, topped with Tex-Mex shredded cheese and seasoned bread crumbs and baked at 350 for 40 mins. OMG, SO DAMNED GOOD!!!!! My new favorite leftover soup recipe!!!
