my niece is a pastry chef- and even she buys premade 🤣
there are some really good ones out there, and that they've been mixed perfectly, rested, rolled out uniformly, and there isn't flour all over the kitchen, dirty bowls & utensils, a glob of random ingredients tracked across the floor is bonus 🤣

man, there was a time in the 70's my gran thought the pinnacle of gastronomy was the aspic experience- 5 of 7 meals a week were jellied.
