I've been practicing my homemade corn tortillas.

I can get them to a soft flexible state when cooked, which is awesome since store bought are brittle and annoying.

My problem is with frying them. I have the opposite problem. Mine then become brittle and fall apart.

Advice?

H-mart dinner! I have no idea if these are supposed to be eaten together but we enjoyed it all. Bulgogi, rice, braised lotus root, braised black beans, pickled garlic greens, stir fried dried shrimp and pickled daikon. Not shown: pickled parilla leaves which we used to scoop up the meat and rice.

went out on Sunday and again last night so had to pot roast a chook. made delicious jus in the pressure cooker and melted some more cambozola in double cream to go over the wee spuds and green beans. felt appropriate on a dark October eve 😋

Crispy Tonkatsu "chippies" n rice~To reheat the tonkatsu from the other night, I sliced it up into thin slices and shallow-fried it on the non-breaded sides. It turns out that it's awesome served on rice w/ a creamy sesame sauce! and who else loves this flavor combo?😉 🍹 #BBQmunity

Did I nail the medium rare tonight?

Thick cut NY Strip seasoned with a thin layer of my All Purpose then a layer of Sweet Amber Fire. Seared on a blazing hot cast iron (475°) then basted with butter until 125° internal. Ten minute rest brought it to the perfect medium rare!
