Hi! I ordered a tshirt. You could've very well packed it in a paper bag & shipped it without any logistical issue whatsoever. If you are a strong proponent of plastic utility, then there's easy access to ample recycled plastic out there, in your case it doesn't even have to be food grade.

In India it is mandatory to mention manufacturer's address and licence number on every food packaging. Was quite shocked to see this missing in EU foodscape

I research food labels and certifications and how that creates communal identity. And this story is the perfect example for it. When you pick a bottle of Gold Medals, you see the Thai constitution as an ode to the Siamese revolution, their liberation, and almost a century old value system.

Here's the "crazy" part. None of the family members leading 4 biggest sriracha brands ever trademarked the name, or their heirloom recipe. There infact is no secret recipe. Everyone knows it, because they intended it to be that way. To share KGT's legacy, to share the joy of food and flavour.

Four generations of quiet existence, no global trade, no mass production, just quality and respect for tradition. KGT's niece started the other original but bigger brand a few years later by the name Sriracha Panich. This one's more widely available.

K Lakud Suwanprasop, KGT's grandson runs the same store his father owned in Bangkok 90 years ago called Hattakamamakarn, meaning house of handmade. His son helps with the business now and 600 litres a month is all the make and sell.

Despite not being granted the region's patent name, the family continues to hand make small batches of this recipe that won gold medals in 1930s. Developed by K Laor, she bottled and labelled it with hand-painted details that is being used to this date.

I think people have started to fetishize this porcupine of a fruit to just incentivise the labour it demands. Like you have to make weekend plans to remove the military grade peel and raphides because that’s how long it takes!
