Last, for Channel Islands National Park, I'd strongly recommend getting a campsite if you're going to go. A day trip is barely enough time to see Santa Cruz Island with the length of the boat ride, much better to spend a night out there

Also, plenty of fantastic beaches and nice seastacks along the PCH between Santa Cruz and SF. Gotta fill in those gaps! Also, don't sleep on southern Big Sur between Lucia and Cambria :)
