Don't obsess over finding The Best™ version of whatever food you want, just find something that looks decent and go for it. The difference between 2-3 star chain ramen and 4 star bespoke ramen isn't going to be discernible until you've had chain ramen dozens on dozens of times. Same with sushi.

Last night a Japanese person said that I look like "young Gary Sinise" which, uhhh. One, I don't think that's accurate. Two, it's not immediately clear how flattering that would be if it were.

I'm sure you've heard this already, but compared to the US there's a lot of places, especially small restaurants, especially small GOOD restaurants, that don't deal with credit cards. Make sure you always have cash on you.

Since you're doing both, focus on getting ramen in Tokyo. There's nothing wrong with Osaka ramen but it'll be better to prioritize takoyaki and okonomiyaki while you're there, since that's what it's famous for. In Tokyo my favorite ramen is "Hakata Furyu" which has a few locations around the city
