This has got several loving references to one of my all time favourite illustrators, Harry Clarke, and also Sergio Toppi.
I’ve included some process photos - the final work is in pen and ink on paper, but the planning sketch was digital.

My pleasure! It’s from Potluck Desserts by Justin Burke - instead of the pie spice (cinnamon and nutmeg) I put in about a tablespoon of fresh thyme. I baked for 20m each for the first 2 stages and added about 5-10 minutes to the caramel stage too.
FOR THE CRUST
1 cup (227 g) unsalted butter, room temperature
½ cup (100 g) granulated sugar 2 cups (250 g) all-purpose flour
¼ teaspoon kosher salt
FOR THE APPLE FILLING
4 to 5 apples, peeled, cored, and chopped (about 4 cups)
½ cup (100 g) granulated sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon kosher salt
Juice of 1 lemon
2 tablespoons cornstarch
FOR THE CARAMEL TOPPING
One 14-ounce can sweetened
condensed milk
½ cup (110 g) light brown sugar
¼ cup (82 g) light corn syrup
1 teaspoon vanilla extract
Pinch of kosher salt Preheat your oven to 350° F and spray a 9½-by-13½-inch sheet pan with baking spray and line with parchment paper, leaving an overhang over the longest edges.
Spray the parchment. Set aside.
Make the crust. In a medium bowl with an electric hand mixer, cream together the butter and sugar until light and fluffy. Add the flour and salt and mix until crumbly.
Press the mixture into the bottom of the prepared pan to form an even layer. Bake the crust for 15 to 20 min-utes, until lightly golden brown. Remove from the oven and let it cool slightly.
Meanwhile, prepare the apple filling. In a large bowl, combine the apples, sugar, cinnamon, nutmeg, salt, lemon juice, and cornstarch. With your hands, toss together until the apples are evenly coated. Pour the apple mixture onto the crust and spread evenly. Bake for 15 minutes. Meanwhile, prepare the caramel topping. In a medium saucepan over medium-low heat, add the condensed milk, brown sugar, corn syrup, vanilla, and salt. With a wooden spoon, constantly stir until the sugar is melted and the mixture is evenly combined and smooth. Bring to just a boil and remove from the heat. Pour the mixture through a fine mesh sieve over a heatproof bowl to collect any burnt sugary pieces.
6 Pour the caramel over the apple layer and continue baking for 20 to 25 minutes, rotating the pan halfway through. The top will puff around the edges first, then continue puffing toward the center. Remove from the oven when the bars are evenly puffed, golden brown, and the tops look dry. Cool on a wire rack. Once cooled. loosely cover in plastic wrap and chill in the refrigerator for at least 1 hour to continue firming up before portioning and serving.
