On my machine the total time is about 4 hours for French and 5 for "sandwich bread." I'll keep experimenting and posting about it.

This machine has a few recipes and I started with the most basic. A few of the others have longer fermentation times so that will mean more flavor. At least one calls for more salt too.

people hear tech guys say their ethos is Move Fast and Break Things, they mentally add "in pursuit of Innovation" but no, breaking things is the means and the end. they move fast to get a spot under the next piΓ±ata, cause if you break the things these guys break, most times a lot of money falls out

Sometimes the quick tips at the beginning of Cook's Illustrated is reason enough to subscribe. Every single one this month is super useful.
The basic recipe is a little bland but there are a few others to try (including French and "sandwich bread" that both have longer fermentation times, which = more flavor).
