Boil three pounds whole Yukon Gold potatoes (the small ones) submerged in cold salted water until tender (can be cut in half easily with the back of a knife). Drain water and mash potatoes with a fork or masher. Add 1/4 cup olive oil, roasted garlic and Himalayan pink salt. Stir with fork.
